Alcohol Tolerance

The point to which yeast can ferment sugar to alcohol and CO2. According to The Alcohol Textbook, 23.8% is the highest proof obtained so far by "batch fermentation with all carbohydrate provided at the start of fermentation."

Also used to refer to the amount of alcohol a person can drink before becoming inebriated.
